
CHERRY TOMATO CONFIT

RED, ORANGE OR YELLOW CHERRY TOMATOES
GARLIC
ICING SUGAR OR CANE SUGAR
THYME
EXTRA VIRGIN OLIVE OIL
SALT
PEPPER
Other spices such as rosemary and oregano can be used.

PREPARATION
After rinsing and drying them, cut the tomatoes in half and arrange them, with the pulp upwards, on a baking sheet lined with parchment paper. Sprinkle with icing sugar or cane sugar, distribute some thyme leaves, salt, pepper and sprinkle with a drizzle of extra virgin olive oil. If you like it, arrange a few cloves of garlic in the pan next to the cherry tomatoes to flavor. Bake in a preheated oven at 120 ° for about an hour and a half.
Once ready, you can enjoy them on a bruschetta, as a condiment for pasta or store them in a glass jar, covered with extra virgin olive oil, after creating the vacuum effect with boiling. In the latter case, rest assured, they will be very useful in the long winter months when you want to prepare a quick but very tasty pasta!
