WRAPPED EGGS

To make the egg wrappers, you'll need eggs, salt, pepper, a teaspoon of oil, and a nonstick pan. It's easy to make. Crack the shell and separate the egg white from the yolk. Add salt and pepper to the egg white. Pour the egg white into the pan, turn on the heat, and swirl the pan, distributing the egg white evenly until it turns white. Place the yolk in the center of the egg white and season with salt and pepper. Using a spatula, fold the edges of the egg white over the yolk, forming a small square parcel. You can finish cooking the egg here, or cook it for a few more seconds for a more cooked yolk. You can serve the egg with crunchy fresh vegetables like tomatoes, peppers, cucumbers, and fennel, and a slice of toasted bread.
